If you’re looking at a professional knife from Global or Wusthof, Schaff, Shun Ken or Henckels, a professional kitchen knife will cost you over $100 and up. Before you spend that much money you should make sure you are comfortable with the knife. When I bought my kitchen knives I went to a local Williams Sonoma where I could handle a variety of brands. Not all knives are built the same, so they don’t feel the same. My choice was a Global knife. The best piece of equipment in your kitchen is a sharp knife.
